Is there such a thing called "matching numbers" with a Cortina? I could not for the life of me and thinking I would know it answer his question.

Regarding your Cortina MK1? Matching #s would be the I.D. tag # and #
scratched on the R/H top mount. Engine # doesn't relate to the I.D. It
does on most American cars.
That's odd that Ford doesn't do that on the Cortina and I wonder why they stopped doing it?? On the 100e series all the engine blocks are engraved with the chassis numbers but more often than not they won't match because the engines are so frequently changed.
Around 1961 or 1962 Fords changed the system. The Chassis Numbers became more like modern VIN numbers and gave a lot more information than previously: building plant and date of manufacture amongst others. This was no longer applicable to the engines, so the two became divorced. Early 105Es used the previous system, and the last 100Es used the later one.
